Cold Brew Brewing Guide

Master the art of Cold Brew coffee with this comprehensive brewing guide.

About This Method

The Chemex uses a thick paper filter that removes much of the coffee’s sediment and oils. The result is a remarkably clean, bright, and aromatic cup that allows delicate flavors to stand out. Its larger capacity also makes it ideal for sharing.

Recipe

Coffee 30 grams
Water 500 grams
Water Temperature 200°F (93°C)
Brew Time 4-5 minutes
Grind Size Medium-coarse

Tools Needed

  • Chemex Brewer
  • Chemex Paper Filter
  • Burr Grinder
  • Gooseneck Kettle
  • Digital Scale & Timer

How to Brew

  1. Heat the water to approximately 200°F.
  2. Place the filter in the Chemex with the three-layered side facing the spout. Rinse thoroughly with hot water, then discard the rinse water.
  3. Grind 30 grams of coffee medium-coarse and add it to the filter. Gently shake the Chemex to level the coffee bed.
  4. Start the timer and pour 60 grams of water, making sure all the grounds are wet. Allow the coffee to bloom for 45 seconds.
  5. Pour slowly in controlled circles, avoiding the edge of the filter. Bring the total weight to 250 grams.
  6. Allow the water level to drop slightly, then continue pouring until the scale reaches 500 grams.
  7. Let the coffee finish draining. The total brew time should be between 4 and 5 minutes.
  8. Remove the filter, gently swirl the Chemex, and serve.

Pro Tips

  • Rinse the filter well to remove any paper flavor and preheat the brewer.
  • If the brew finishes too quickly, grind finer. If it drains too slowly, grind coarser.
  • Keep the water level consistent and avoid pouring directly onto the filter walls.
  • Use freshly filtered water to preserve clarity and sweetness.
  • The Chemex is ideal when you want clarity above all else. It brings forward delicate aromas, bright acidity, and the subtle details that make each coffee unique.
